An Imperial Black Ale. A green hop India Black Ale (IBA) with hops from our own garden is the ultimate combination of autumnal harvest freshness and the dark depth of a roasted beer. Since green hops (freshly harvested, undried cones) provide a distinctly "greener," more herbal, and ethereal aroma, a fascinating contrast is created. In the glass, it displays a deep, opaque ebony black. It is crowned by a creamy, slightly brownish (mocha-colored) head. The bouquet is unique and can hardly be replicated with dried hops: The "green" soul: Since the hops went directly from the garden to the kettle, an extremely fresh aroma of freshly cut grass, chlorophyll, and herbs dominates. The dark side: Beneath the surface lie the roasted notes of the malt – bitter chocolate, cold coffee, and a hint of pumpernickel. The bitterness is pronounced, but thanks to the use of fresh hop cones, it's softer and less harsh than with pellets. It's reminiscent of herbal liqueur or strong black tea. The beer is light-bodied, which keeps it highly drinkable despite the complex aromas. A special feature of this homebrew: Since hops in one's own garden often develop a "terroir," this beer has a highly individual character. The essential oils of the fresh hops give the Black Ale a resinous, almost resinous texture that harmonizes beautifully with the roasted malt bitterness. This India Black Ale is a "liquid garden in autumn." It celebrates the harvest season by combining the freshness of the hop garden with the comforting richness of a dark beer. There are no digital temperature sensors here that adjust with a click. We work by eye, by feel, and with the direct heat of the flame. We don't stir with a motor, but with our traditional wooden spoon. For us, this is more than just a tool – it's the direct connection to the wort. Every turn lets us feel the viscosity and the development of the beer. Even before the first drop of malt sees the kettle, the work begins at the hand-operated gristmill. Here, the grain is still crushed using pure muscle power – a physical effort that you can later taste in the depth of character of our beers. The philosophy: If it fascinates us, it ends up in the kettle. Our creative department is a zone of absolute freedom. We don't let ourselves be restricted by stylistic templates. What interests us, gets brewed.
