Dolly is a sheep. In this case, however, Dolly is the first work of four brewers who never looked for each other and yet found each other. The Braukollektiv Freiburg is an international brewers' association and an absolute dream team when it comes to unusual, creative craft beers. And they even have a monkey, or so they claim.
The Braukollektiv Freiburg is the crazy idea of four beer fanatics, as press officer, CEO and mascot Spanky revealed to us in exchange for some bananas. Chris, Gil, Bernhard (called Børn) and James are true beer lovers who began their beer careers independently of each other and on different continents. The four guys started their first brewing attempts in their basement at home, Gil and Bernhard in Germany, Chris in Australia and James in sunny California. As all roads lead to Rome at some point, or in our case to Freiburg, the four homebrewers ran into each other. At a brewing seminar they tied the knot by founding their own label, the Braukollektiv Freiburg. Beforehand, however, they determined who among them could make the best pale ale. On this basis, the four alchemists developed the recipe for their first beer together, Dolly . Dolly was supposed to bring craft beer to Freiburg and be a lifesaver in the flood of classic beers for everyone who likes to try something new alongside Pils and the like. As gypsy brewers, they started marketing Dolly and their little lamb was well received. And since brewing with other brewers is even more fun, the guys joined forces with Freigeist Bierkultur and Emma - Biere ohne Bart and conjured up a fantastic Mexican Standoff Stout .
Because Dolly was such a well-behaved pet, the brewing collective quickly expanded its zoo. From then on, Horst the bear and Laird the great white shark were also romping around alongside the sheep. The four initially surprised their brewery hosts with lots of hops, but were able to convince them of their skills and expertise. After all, good beer speaks for itself and neither the most traditional brewer nor the most staunch wine drinker could resist the animal charm of the brewing collective's beers. Freiburg is actually a wine stronghold. Brewers don't have much of a hand here due to tradition. But Gil, Bernhard, Chris and James see their niche precisely there: wine connoisseurs with trained palates. They can taste very well whether an aromatic hop, a green hop or rather the classic bitter hop has gone into the kettle. Craft beer is the self-proclaimed hop headquarters and the perfect playground for wine connoisseurs who want to surprise and challenge their palate every now and then. Ziggy is happy to be a guinea pig!
