Axel Kiesbye is not just a brewer, but rather an institution in the beer business. The master brewer doesn't just brew beer, he lives it. For years, the Austrian-by-choice has been passionately committed to the appreciation of beer and has already launched numerous beer-related projects. Wild in the forest
Axel Kiesbye has always been a nature boy. Even as a child, he was fascinated by untouched forests and the wild; nature is his favorite place of retreat and a never-ending source of inspiration. On one of his forays into wild terrain, the brewer came up with the brilliant idea for a new beer creation: forest beers. Kiesbye wants to brew the variety of aromas of the forest into his beer, to bring the forest into the glass. To do this, he throws various tree components such as branches, flowers, leaves, cones and fruit into the kettle and composes an aromatic masterpiece that transports you straight into the forest. Kiesbye cleverly manages to pack entire flavor landscapes into his beer. One sip of forest beer and you're standing in a sun-drenched clearing in a dense forest, ferns overgrow the forest floor, birds chirp in the treetops and there's a wonderful smell of dewy grass and earth.
