Monks brewing beer were not uncommon in the Middle Ages and even today you can find monasteries where monks actually still brew beer. The Abbey of Notre-Dame de Saint-Remy is a monastery that has been producing the most delicious beer for more than 400 years. And not just during Lent.

Tradition and quality

The brewery of the Trappist Abbey of Notre-Dame de Saint-Remy in Rochefort is in the south of Belgium. The location of the monastery is ideal for brewing beer, as there is an excellent quality source in the immediate vicinity. The water for brewing is obtained directly from the Tridaine spring and processed without any chemical or physical treatment. This gentle handling ensures an incomparable natural freshness. In addition to the special water, a special yeast is used that has mutated over the centuries of brewing and gives the beer an exceptional taste. The Trappists have been cultivating the craft of brewing since the Middle Ages and work according to traditional recipes and specifications. You can taste this wealth of experience: beers like Trappistes Rochefort 6 or Trappistes Rochefort 8 impress with a rich range of flavors, a wonderfully strong color and a dimensionally stable, fine-pored foam.

Everyday life in a monastery

The work of a monk is divided into two areas. The top priority is spiritual work and cultivating a relationship with God. But the world in which you find yourself should not be forgotten either: the Cistercian monks, especially the Trappists, hold the tradition of craftsmanship very highly. In addition to their charitable work with social and cultural institutions in the area, the monks of the Abbey of Notre-Dame de Saint-Remy were active in agriculture until 1960. After agriculture was abandoned, all labor now went into brewing beer. The Trappists are proud of their centuries-old craft and the tradition in which they still brew. To protect and unequivocally identify the products, there is a seal that is awarded according to strict specifications and may only be used by seven abbeys in Belgium and the Netherlands.
