DDH usually stands for "Double Dry Hopped", ie double cold hopped. In this case, however, DDH abbreviates the title Double Dry Elderflower. The fine drop comes in chic champagne bottles and, like the fine sparkling wine, is sealed with a cork. The large bottle contains an exquisite Berliner Weisse that has been fermented with Brettanomyces cultures and stored for several years after the brewing process has been completed. Elderflower was added to the beer at various stages of ripening. The result is a fabulous beer with a lively character, full-bodied depth and great elderberry notes.
The Berliner Weisse, created in collaboration, flows into the glass in a warm gold tone and smells like a whole elder bush. The sweet, delicately spicy scent of the elderflower mixes in the nose with a hint of lemon, which brings liveliness and acidity into play. The initial taste reveals a complex body with a silky mouthfeel and a spectacularly balanced balance of sweetness and fruity acidity. The elderberry is the most dominant note, with fine nuances of white grapes, a little yeast and creamy yoghurt. The finish is dry, sour and stays on the tongue for a long time with an aftertaste of elderflower.
