In the past, beers simply had to be tasty. Today the palates are more trained and the demands are constantly increasing. Beer fans want sophisticated creations that shine with subtly coordinated hop varieties, that taste complex and have a complex character. In addition to the taste component, a whole range of other factors play a role these days: the appearance must be impeccable, a perfect foam should crown the hop work of art and the consistency must be pleasing to the palate and enjoyable.
In terms of texture, the current trend is for beers that are not slim and thin, but rather those that run down the throat thick, creamy and almost creamy. As so often, the pioneers in this field are the craft brewers. They saturate the market with beers that one would like to describe as tactile.
An excellent example of stable brewing art with a steadfast stature is Thick As A Brick from Yankee & Kraut. The Ingolstadt Hopheads have created an 8.1% strong Double Dry Hopped Double New England IPA that couldn't be thicker and proudly claims this fact. The viscous specialty is brewed with Sabro and Idaho 7 hops and tastes primarily of the juice of ripe, golden pineapple. A tropical feast for all the senses!
