The specialty of Ulrike Genz’s beers is that they get better and better with age. There are beers that become stale and flat over time, not the subtly composed brews from the Schneeeule house. The beers from the Berlin brewery are even made to lie in the cellar for a while before being enjoyed. As they ripen, they gain in character, complexity and taste nuances.
The old is no exception: the vintage white was stored for the purpose of developing its aroma before it was sold. The beer was first left on wood for eight months, then it was bottled and matured in the bottles for a few more months. The (preliminary) result is a diverse beer with a wonderfully sour profile and complementary fruitiness. A perlage reminiscent of champagne conjures up the feeling of velvety mousse on the tongue and gives the beer additional exclusivity.
Ulrikes Alte appears in a sunny gold tone in the glass and is very slightly cloudy. A seductive scent of yellow fruits with exquisite acidity rises from the small foam hood. The initial taste is intensely sour and has a full-bodied taste of golden fruit: sweet pineapple meets slightly unripe berries and sun-kissed stone fruit. A touch of salt and a warm, woody note complement the fruity acidity perfectly. The finish is dry, slightly malty and slightly acidic.
