While beer was brewed, bottled and sold exclusively according to a certain pattern for a long time, brewers are currently taking more time for their creations. The brews are cold-hopped, mixed with older or younger brews, stored on fruit or other flavorings or aged in barrels.

By means of barrel aging , a beer is not only stored, it also deepens its own aroma and supplements it with components from the wood. Often barrels are used that previously contained an intense liquid. Wine, for example, rum, whiskey, bourbon, sherry or similar. The type of wood and the length of time it has been stored also influence the composition of the brew. In the process of barrel aging, the wood serves as a natural oxygen filter and leads to further fermentation of the beer. This creates a variety of aromas and flavors.

The Bamberg brewery Blech.Brut is a fan of the taste of wood and likes to use it to refine their already sophisticated brews. In order to keep the infiltration of foreign tastes as low as possible, they did not fill their Dortmunder Export in barrels, but stored it on pieces of oak wood. The American oak wood gives the beer a smooth note that goes well with malt, grassy hops and delicate citrus. The brewers have chosen an elegant way to change the character of their beer.
