Black Phillip from La Debauche is a very special beer specialty. The black beer was fermented with Brettanomyces yeast. This special type of yeast is a wild yeast and is very popular in the craft beer business. Large industrial breweries refrain from using wild yeasts because they cause uncontrolled fermentation and cannot be influenced. A challenge that craft beer brewers are happy to take on! In the wild, the Brettanomyces mushroom prefers to grow on fruit peels. In the past, orchards were much more common than they are today and there was a high probability that there was one near the brewery. Since fermentation was still done with an open vat back then, it often happened that the wild yeasts found their way into the beer. Today, wild yeasts are welcomed with open arms and valued for their characteristic flavors. These are truly special and divide the beer community into two camps. Love it or hate it is the motto.
As expected, Black Phillip comes in a deep black mahogany tone and forms a massive, slightly browned head of foam. Scents of freshly brewed coffee, dark chocolate, caramel and tanned leather rise from the foam. The Brettanomyces add an indefinable scent that is described by some as blue cheese and by others simply as “funk”. The taste follows the smell and reveals a play of aromas of caramelly roasted malt, tobacco, coffee and unmistakable Brettanomyces notes.
