The history of the Strauß Brewery – widely known by its familiar name, Wettelsheimer Bier – begins in 1797, when farmer Nikolaus Erdinger auctioned the brewing and spirits concession for Wettelsheim and shortly thereafter established the brewery and inn. Over the following decades, the business changed hands several times until trained master brewer Johann Michael Strauß took over the brewery in 1874. Since then, the brewery has been continuously owned by the Strauß family. Under the leadership of his son Karl Strauß, the facilities were extensively expanded and modernized at the end of the 19th century. Today, the family is run by the eighth generation – currently under the care of Karl Strauß, who has wielded the reins (and the mash paddle) for more than three decades. A particularly inviting and cozy feature of the brewery is the Wettelsheimer Cellar. This beer garden on the Rappenbuck was built by Johann Georg Ranzenberger in the mid-19th century and is a popular meeting place for enjoying beer under the Franconian sky. For more than 30 years, the inn has been run by Marga Walk and her family. Beer cellars are a fabulous Franconian tradition and a living cultural asset, built on the shoulders of innkeepers like Marga.
Despite continuous modernization, the family remains committed to traditional values. The beers are still brewed according to the German Purity Law, and processes such as flash heating or pasteurization are avoided to preserve the beer's natural flavor and character. Regional appreciation is evident in the selection of regional raw materials and in the bottling process: To this day, you can buy draft beer in hand-pitched wooden barrels. As one of the last Franconian breweries, Wettelsheimer Bier continues this tradition to this day, preserving a piece of beer history. A truly unique selling point in the region! The brewery distances itself from industrial mass production and instead emphasizes freshness, quality, and regionality.
Under the Wettelsheimer Bier label, the Strauß Brewery offers a selection of classic Bavarian specialties. These include the hoppy and fresh Wettelsheimer Pils, the malty Märzen with its delicate sweetness, and the balanced Helles. During the colder months, robust Bock beers expand the selection and provide seasonal variety. The beers are characterized by clear flavor profiles, meticulous craftsmanship, and regional authenticity.
