The grapefruit is a controversial fruit: thanks to its tart tartness and fine bitterness, it is absolutely not popular with children and many adults also avoid the vitamin bomb. However, if handled correctly, citrus fruit can do a lot. The fruity acidity is a freshness kick for hot days, the exciting bitterness can give creations structure and character and the juiciness goes wonderfully with a whole range of other flavors.
