Hoppy, hoppier, Hoptimum!
Hops are probably the most important ingredient in beer. Using alpha acids and hop oils, it gives the brew its fine bitterness and a whole lot of aroma. You can use hops at different stages of the brewing process and use them for cold hopping. The most common forms of green gold are pellets, extract, and fresh or dried whole cones.
The legendary craft beer brewery Sierra Nevada from sunny California likes to use cone hops for its beer. For their Triple IPA Hoptimum, however, not every flower goes into the kettle: the brewers select the hops by hand and only select the largest, juiciest cones. Some of these magnificent specimens go directly into the kettle, the rest is saved for dry hopping and hop addition via torpedo (a sophisticated modification of classic cold hopping) and used later. This triple addition of hops conjures up maximum flavor in the beer and ensures that the brew more than lives up to its name.
