Black Project’s Cipher is so pissed off that an avid fan described it as a small test of courage. The crisp sour ale is brewed with plums and apricots and is characterized by its fruity acidity. Like all Black Project beers, Cipher is fermented by spontaneous fermentation with wild yeast. With an impressive 7.1% alcohol content, the sour beer is one of the stronger of its kind.
The noble drop shows itself in a copper-red streaked amber gold in the glass and adorns itself with a small, frothy crown in off-white. In terms of smell, the sour beer presents itself with an interesting bouquet composed of notes of ripe apricots, freshly harvested raspberries and some plums. The taste follows the first impression and caresses the palate with a fruit basket of sun-kissed stone fruits. A hint of almond and hints of sparkling lemon juice underline the summery fruitiness, while the clear acidity is a dominant factor in the aroma play.
