In the region around the West Flemish town of Watou, the Tripel beer style has a very special name: the Belgian classic is affectionately called Bernadetje here. This nickname is several decades old and refers to Bernadette, the youngest daughter of Evariste Deconinck. Evariste is the man who took over the St. Bernardus brewery from the Trappist monks and continued their culinary legacy with great dedication and attention to detail.
The beery homage to his Bernadetje (translated from Dutch as “little Bernadette”) is a powerful brew with 8.0% alcohol content and a bright golden color, shot through with delicate veils of yeast. An airy crown of velvety foam sits atop the sunny yellow beer and emits a floral aroma. The flavor profile of the blonde St-Bernardus Tripel is made up of fruity, floral and tart components. The silky-smooth sweetness is broken up by a pleasant hop bitterness, which also brings a summery freshness to the beer. The brew has a light-footed character, which can be changed through aging thanks to the high alcohol content. The beer can be stored in the bottle for up to two years without losing its taste or quality. On the contrary: storage deepens the aroma and gives it an exciting complexity.
