Anyone who has once made the mistake of biting into a wooden pear will certainly not make this mistake again. The original form of our current pear trees bears fruit that is extremely bitter, hard and sour. It takes a true artist to bring the flavor out of these stubborn fruits. Axel Kiesbye is one such artist. He is able to extract the aroma from the wildest plants and transport it into a beer. The nature lover specializes in so-called forest beers. These beer specialties all have very special ingredients that Kiesbye discovered on his forays through the Austrian wilderness.
The Waldbier Holzbirne is the vintage beer from 2018 and was brewed with pear blossoms and pear leaves, as well as chopped and roasted pear wood and the dried fruits of the Holzbirne. Kiesbye collected the ingredients from wooden pear trees from the Wildalpen forestry district in Styria. After the brewing process, the beer matures to its full glory in the storage tank. The result is a complex beer that uniquely captures the character and special nature of the wooden pear.
The wood pear forest beer flows into the glass in a clear gold tone and forms a white head of foam. When you open the bottle, the beer exudes a wonderful potpourri of fine scents. Light malt and freshly baked cookies combine on the nose with the delicate scent of pear blossoms, a hint of herbs and creamy honey to create a tempting mixture. The initial taste is a finely bitter beer with beautiful woody notes, floral hops and a soft caramel malt base. A hint of vanilla gives the beer a certain extravagance.
