In the second edition of their dry-hopped Modern West Coast IPA Slice of Sunshine, the brewers at Bad Seed Brewing from Denmark have refined their recipe: They have tweaked a few flavor parameters, increased the bitterness and also provided an extra charge of carbon dioxide. They have also fine-tuned their dry hopping technique, which has resulted in an even rounder, more harmonious and drinkable beer.
Slice of Sunshine brings together two contemporary icons. From the classic style of the West Coast IPA, Bad Seed’s interpretation borrows the powerful bitterness, clear and clean character and crisp malt profile, while the dry hopping technique and underlying aromatic direction are reminiscent of modern India Pale Ales. The best of both worlds is Slice of Sunshine.
The delicately cloudy beer presents itself in the glass with a coppery amber hue and adorns itself with a creamy ivory crown. A nose of tropical and citrus-fresh fruits rises and makes you thirsty at the first sip. The taste strikes a perfect balance between fruity sweetness and hoppy bitterness: juicy notes of peach, mango, citrus fruit, melon and soft malt meet spicy resin and a to-the-point, strong bitterness.
