Yuzu is a fruit that has only found its way into European cuisine in recent years. The citrus fruit has been used in Asian cuisine for thousands of years and is valued for its complex, multi-layered aroma. The small, tangerine-looking yuzu is primarily used for the juice and bright yellow skin, the white flesh underneath the skin is quite bitter and therefore unusable.
Craft brewers are known for experimenting with unconventional ingredients, so it’s no surprise that the Yuzu has found its way into the craft beer industry as well. The fresh acidity of the citrus fruit harmonises wonderfully with the aroma of many hop varieties and gives malty beers a certain elegance.
The Canadian brewery Steamworks takes advantage of the properties of the yuzu in their Yuzu Gose. The brewers complement the classic aroma of the Gose with the sour fruitiness of the Yuzu and create an unusual beer specialty with great refreshing potential. Steamwork’s interpretation of a Gose flows into the glass in a crystal-clear, shiny gold tone and is adorned with an impressive amount of fine-pored, white foam. On the nose, the beer presents itself with notes of tangy citrus fruits, natural yoghurt and salt. The taste follows quickly and plays finely sour yuzu, floral hops, light malt and a spicy touch of yeast. A generous dose of salt completes the play of aromas.
