Thomas is a very special genre of beer. It is one of the Brut IPAs, a beer style that only really became established with the spread of the craft beer movement. A Brut IPA is an India Pale Ale that has been fermented with a Champagne yeast. This special type of yeast is used to make champagne and gives the fine sparkling wine its dry character. Resourceful brewers came across these yeasts and took advantage of their properties. Brut IPAs are usually very fizzy, light-footed beers that are wonderfully dry and lively.
Thomas is no exception. The fragrant beer flows into the glass in a pale, slightly cloudy gold tone and forms a small, white head of foam. When you open the bottle, the light beer exudes a delicate scent of white grapes, spicy yeast and light fruits. A delicate hint of white pepper and a little hoppy citrus complement the play of aromas. The initial taste reveals a surprisingly full-bodied body, to which the lively carbon dioxide gives lightness. The taste of the Brut IPA is somewhat reminiscent of wheat, even if it is much drier: it is fruity, has a nice yeasty note and tastes subtle of spices such as clove. The hops are floral and citrus-fresh. The finish is sweet and nice and dry.
This IPA is surprisingly different and truly delicious. The perfect introduction to the exciting world of Brut beers!
