The world’s craft brewers are constantly on the lookout for new, innovative ingredients. Year after year, new hop varieties are discovered or bred, and the ladies and gentlemen behind the kettles are not afraid to use raw materials that do not comply with the dictates of the Bavarian Purity Law. Phantasm is an absolute novelty on the market and already a secret favorite of master brewers. Phantasm is not a new type of hop, but a powder made from the skins of Sauvignon Blanc grapes. What makes this substance so attractive for beer production are the so-called thiols. These sulfur compounds conjure up fruity aromas in the beer and are found in both hops and grape skins. Combining thiol-rich hop varieties with Phantasm gives the brew a maximum of intense tropical fruit notes.
The collaboration partners Buddelship and Brouwerij Poesiat & Kater have done just that and brewed a Cold IPA from Phantasm and the hops Mosaic, Simcoe and Citra that is bursting with juicy fruit notes. The fruit explosion is called Hunky Dory and, in addition to the exuberant fruit, also brings a crisp 32 bitter units and an impressive 6.5% alcohol content to the glass.
