The fresh hop cone, recently picked from the vine, exerts a special fascination on the men and women in brewhouses around the world. The flower is at its aromatic peak, and its flavor is never more intense before or after. It’s no wonder, then, that more and more breweries are choosing to brew beer directly from freshly harvested hop cones, rather than waiting for the green gold to be dried or pressed into pellets.
The two gourmets at Two Chefs Brewing have also caught the hop bug and arranged for a shipment of fresh, still-wet hop blossoms from Germany to brew a delicious Cold IPA. The duo selected the Callista, Tango, and Titan varieties and used more than 150 kilograms of this explosive mix. To extract maximum flavor from the blossoms and achieve a crisp, fresh, fruity, and clean result, the brew was cold-fermented.
This exquisite brew boasts a vibrant 6.0% ABV and unites the best qualities of each hop variety in a majestic masterpiece. Callista delivers complex notes of wild berries and ripe stone fruit, while Tango contributes juicy citrus hints and sun-ripened mandarin orange. Titan rounds out the aromatic profile with floral accents, spicy herbs, and a crisp bitterness.
