The Latin term Septem stands for the number seven in German. The Greek brewers of Septem Beer liked this term and dedicated their work to it. A different beer for every day of the week – that was the plan that friends Sofocles Panagiotou and Georgios Panagiotou put into action in 2009. Greek craft beer manufacturer Septem Bier offers crowd favorites like Friday's Pale Ale , 8th Day IPA , Saturday's Porter and Sunday's Honey Golden Ale . Beers that are produced according to classic brewing styles and score points with their simple elegance and the unusual idea behind the names. The brewing takes place on the island of Euboea, which is otherwise known for its historic past. Hops are to beer what grapes are to wine. Following this philosophy, the men at Septem Bier create their beers in the same way a winemaker composes his wine. Hop varieties from Greece and around the world are carefully examined and only the hops that fit the concept perfectly are ultimately used for the beer. In order to preserve the full hop aroma during the brewing process, the beer is not pasteurized. Panagiotou is of the opinion that beer is not just a refreshing drink for a summer visit to the cellar, but is in no way inferior to wine in terms of sophistication and complexity. Sofocles Panagiotou, co-founder of Septem Bier and originator of the motto, is a chemist and oenologist who spent his life researching and perfecting wine. As a passionate beer drinker, in 2009 he came up with the idea of applying the principles of his work to brewing beer - a plan that brought him great success and has already brought in numerous awards and prizes. In contrast to many craft beer brewers who start out as home brewers in their own kitchen, Sofocles Panagiotou started his business right away. Together with his business partner and friend Georgios Panagiotou, he took every step of starting the company and in the end they had their own, professional brewery.
