The Doppelbock oak from Schlenkerla is a masterpiece in itself with its dark aromas and dense, intense aromas. However, this specimen matured for another five years in the well-tempered rock cellars under the historic brewery on Bamberg’s Stephansberg. The wonderful smoked beer was bottled unfiltered and today, after extensive storage, is sold as a 2015 vintage beer.
The Schlenkerla Oak Doppelbock bears the addition "Oak" in the title because the malt is not kilned over beech wood, as usual, but over the aromatic wood of the oak. The Schlenkerla brewery is one of the last breweries that still malt their own barley and uphold the time-honored tradition of kilning. The use of oak gives the malt a soft complexity and a multitude of fine taste nuances.
Bock, traditionally brewed for the winter and Christmas season, flows into the glass in a deep, dark copper tone and adorns itself with a fleeting veil of white foam. A multi-layered scent of wood fire, fried bacon, raisins in rum and caramelized nuts rises in the nose and invites you to take the first sip with sirens singing. The initial taste presents a voluminous body with a full-bodied range of aromas and a wonderfully soft, creamy mouthfeel. Velvety notes of strongly roasted malt, bacon, candied dark fruits, delicate caramel, smoke and honey caress the palate before the smoky, bitter finish makes you want another bottle.
