Rosemary and thyme are two herbs that are found primarily in Mediterranean cuisine. We use them to give meat, fish, sauces, vegetables and desserts that little extra something. In addition to their culinary benefits, the two aromatic plants are also said to have healing properties. They are used in natural medicine in fresh and dried form, and are used to make teas, tinctures, oil and honey. While rosemary has both antiseptic and prebiotic properties, thyme is used to treat respiratory diseases and inhibits inflammation.
In addition to rosemary potatoes, sitz baths and cough syrup, the herbs can also be used for brewing. The Freigeist Bierkultur brewery has an interest in unconventional brewing and has chosen the two herbs as the star of its latest creation. The brew is called medicinal herbs and contains thyme and rosemary as well as a select tea blend.
The brew is presented in a coppery shimmering red gold in the glass and is crowned with a fleeting hint of foam. The scent is reminiscent of homemade cough drops made from lemon peel, herbs and honey. The taste goes in the same direction: fresh citrus notes meet a crisp, fruity acidity, earthy herbs and a soft caramel sweetness on the palate.
