Rock cellars are a relic of times long past: when it was not yet possible to use electrical devices for cooling, the always constant temperatures and the favorable climate underground were used to be able to brew beer at least until spring. Beer was stored in the cellar, and the cool liquid was served in the cellar.
Today you are no longer dependent on underground cooling, but there are still a few breweries in Germany that use their rock cellars. Barrel-aged beers are currently very popular in the craft beer scene and they work particularly well in a well-tempered cellar.
The Vulkan brewery from the Eifel is one of the breweries with its own rock cellar. Their cellar is no less than 30 meters below the ground, making it the deepest beer cellar on earth. The vaults, set in basalt, support the brewery and house a number of fine beer creations. In limited editions, the team brews exquisite specimens that are matured in wooden casks. In 2022, for example, the brewery released its Imperial Porter, which was aged in brandy and port wine casks. The night-black beer enjoyment with a hazelnut-brown crown comes in chic champagne bottles and enchants with an intensive range of flavors from coffee, fine chocolate and candied red fruits.
Water, barley malt, hops, yeast
