Pruim is the Dutch word for plum or damson, and at 3 Fonteinen it stands for a range of beers that have been refined with these or other stone fruits. In order to transfer the taste of the fruit into the barley juice, the brew is mixed with a large amount of fruit by means of maceration and stored for months. The brewery uses only hand-picked fruit from its large network of Belgian farmers and does not use juice, concentrate, syrup or artificial sweeteners, nor does it pasteurize or filter the final product. Lambics are used as a base, which are mixed from young and old brews that have been stored for different lengths of time. The complex process results in a refined, complex and well-rounded beer with character and a maximum of juicy aroma.
For Pruim Mirabelle, mirabelles were used that were harvested at the peak of their ripeness and went straight into the kettle. Beer and fruit macerated for almost four months and there are just over 300 grams of fruit in one liter of barley juice. The noble drop flows into the glass in the color of ripe mirabelle plums and smells like it too. The first sip reveals a dry body with fruity acidity, exuberant mirabelle notes and harmonious hints of oak, floral hops, funky yeast, tobacco and a tangy hint of lemon.
