The granite bock is a specialty in itself: The beer is made in the historic brewhouse of the Hofstetten brewery and, once the brewing process is complete, is combined with hot blocks of granite. This unconventional step caramelizes the natural sugar in the beer and gives the brew an incomparably full-bodied and creamy caramel note as well as its wonderful rust-red colour. Because the brewers are reluctant to rest on their laurels, they took this fantastic creation and developed it further in a number of experiments. A granite ice buck and a granite buck game board are now part of the range.
The latter is a barrel-aged variant of the classic granite bock. For a special aroma, the brewery borrowed wooden barrels from the Italian winery Sandre Vini. The choice fell on red wine barrels of the Raboso variety. These grapes are characterized by their high acidity and produce a deep red, flavorful wine that gives a great bouquet to the cask. But the wood does not only contribute red wine notes to the enjoyment of beer: In addition to its aroma, the barrel houses a number of yeasts and bacteria, which subject the beer to further fermentation and develop it further in terms of taste. The Raboso barrels delivered both Brettanomyces yeasts and lactic acid bacteria - an unexpected duo that gives the brew a successful interplay of acidity and sweetness.
