The Symphony of Hops is a series from Sori Brewing. The brewers are self-proclaimed hopheads and revere the green gold for its wide range of wonderful aromas. Hardly any other plant is as varied and flavorful as hops, and the fragrant umbels are absolutely essential in the beer scene.

Ensemble Ten, for example, is a New England Double India Pale Ale in which the Cashmere and Galaxy varieties are the stars. Idaho 7 also appears in a supporting role, but cashmere and galaxy dominate the taste profile. The honey-yellow beer is crowned with a stately crown of dense, creamy and fine-pored foam, which seduces to drink with an olfactory bouquet of melon, peach, pineapple and pine resin. The first taste caresses the palate with a subtly balanced composition of tropical fruit, stone fruit, pine resin and lemongrass. The trained palate tastes nuances of light malt, oats, tangerine, grapefruit, passion fruit, peach and freshly mown grass. A crisp, skilfully balanced bitterness rounds off the play of aromas and perfects this juicy NEIPA.
