After the brewers of the craft beer movement have spent years developing new and reviving old types of beer and using a wide variety of raw materials from all over the world, the area of interest is currently broadening. While some breweries specialize in wild yeasts , others plunge into the production of alcohol-free brews or make brews from organic ingredients . Another area that is now in the public eye is barrel aging . Breweries look for collaboration partners who run wineries, distilleries or similar companies and borrow old barrels to mature their beer in. The aroma passed on from the barrel to the brew depends on the previous contents, but is not the only advantage of this type of storage. Depending on the duration, the beer’s own taste deepens, the alcohol content increases and the character becomes more complex.
The team at the Maisel & Friends brewery has been a committed barrel-aging group for some time now and has a whole series of different beers that have been refined in wooden barrels. Their Bourbon Bock is a classic in this category and has been in production for six years.
The basis is a strong bock beer, which is stored for several months in hand-picked whiskey barrels from various American distilleries after the brewing process has been completed. The copper-red brew combines strong whiskey notes with toasted coconut, exotic vanilla, toffee, honey and warm spices. Sensational!
