Green hop beer is an autumnal specialty that has really taken off in recent years. Brewers from all over the world flock to the hop gardens for the harvest and personally select the most aromatic cones for their creations. They pay close attention to alpha acids, essential oils, polyphenols, thiol compounds, hop resins, and other components that can influence a beer’s flavor, bitterness, and balance. Just like with wine, terroir plays a role in hops: the soil in which the variety was cultivated makes a difference, and brewers compare the country of origin, harvest, and vintage to find the perfect hops. This all sounds very scientific, but we suspect it’s also quite enjoyable to stroll through the towering hop vines, sniff the fragrant cones, discuss the finer points of this noble ingredient with other hop enthusiasts, and then choose one that goes straight from the field to the brewhouse.
The Munich Brew Mafia participated in the 2025 hop harvest, sourcing Callista and Tettnanger Blanc hops in Tettnang. The freshly harvested hop cones were then brewed directly into a wonderfully fresh, hoppy, and resinous green hop beer called "Zwei Sorten Grün" (Two Varieties of Green), without any detours, drying, or other processing. The brew boasts fruity berry notes, zesty citrus, grassy hints, and a touch of caramel.
