Ulrike Genz lives and breathes beer. And not just any brew, but Berliner Weisse – the beer of her homeland. The master brewer is fully committed to the traditional style of the capital and has been presenting us with extraordinary interpretations for years, all without syrup. Her speciality is Berliner Weisse, which has been refined with flowers, herbs, or fruits. But Ulrike can do even more!
She's currently demonstrating her skills with a so-called Wild New England IPA. Her Wild Billy is entering its second edition and was once again brewed in collaboration with the team at Fuerst Wiacek. While Brew 1 was brewed with orange and lemon peel, ginger, and lactic acid bacteria, the sequel is all about roses: Lactic acid cultures once again provide a crisp acidity, and thanks to the hop varieties used, there are also citrus notes, but rose petals take center stage.
The Wild NEIPA, subtitled "Fuzzy Rose," presents itself in a rich honey-gold color with a peachy shimmer in the glass, adorned with a veil of white foam. A captivating composition of funky yeast spice, fruity acidity, lime, grapefruit, and rose water runs like a common thread through this olfactory and culinary delight. You've definitely never experienced rose like this before!
