The Wildfang series of the Nuremberg Orca Braus is a series of experimental beers that shine with extraordinary ingredients, exciting aroma pairings and their stunning taste. Each wild caught is unique and has its very own, special character. The series is now in its fourth version and the current tomboy has it all!
The basis for wild catch number 4 is a Belgian season brewed with wheat and barley malt. In addition to two types of grain, there are four different mushrooms on the label: Belgian seasonal yeast gives the beer its typical taste, a lactobacillus ensures creamy sweetness and a touch of acid, while two types of Brettanomyces strains bring swing and funk into play. After the brewing process was completed, the beer was stored on cherries, beetroot and horseradish for a full year and a half. This unusually long maturation makes the beer a complex culinary delight with depth and substance. Further storage after bottling enhances the fine drop.
The result is a sour season with a hefty 7.0% alcohol content, which comes in fine champagne bottles. The fourth tomboy presents itself in a warm copper tone in the glass and forms a small crown of snow-white, fragrant foam. A fresh acidity and the stubborn aroma of the Brettanomyces yeast fill your nose and tempt you to take the first sip. This reveals a harmonious combination of sweet cherry, earthy beetroot and smart horseradish.
