The Notre Dame de Scourmont Abbey in Belgium houses not only a monastery and a cheese factory, but also a brewery in its hallowed halls. As one of just under a dozen Trappist breweries worldwide, Chimay bears a special seal. The Trappist seal may only be used by breweries that brew under the supervision of monks. In addition, the brewery must be located within the monastery walls and a portion of the profits must be donated to social causes. Chimay Gold is a classic Belgian blonde and is one of the most popular brews in their range. The brew is a bright amber gold and has a delicate cloudiness. A small crown of dense, white foam sits on top of the cloudy beer. In addition to water, yeast, hops and malt, the ingredients list includes two extras that can already be detected in the aroma: floral hops meet gentle grain, tangy orange peel and a spicy hint of coriander seeds. The taste follows the same path and envelops the palate with a silky-soft potpourri of sweet and pithy malt, citrus-fresh fruit notes and fine spice. The bitterness is perfectly balanced with the full-bodied sweetness.
