Actually! The team at the Spanish brewery Espiga not only enjoys eating cookies, they also enjoy brewing with them. Their latest creation is a barrel-aged Imperial Pastry Stout that not only contains barley, oats and wheat, water, yeast and Galena hops, but also vanilla, cocoa nibs and real biscuits. The handy pastries conjure up a strong aroma and a delicately melting sweetness in the brew. Matching this, Cookies Hole delivers a harmonious interplay of coffee notes, chocolate hints and a fine roasted aroma. Storage in rum barrels contributes notes of pickled raisins and a woody spice. A touch of vanilla combines the individual components into a tasty whole that reminds us of cookies and freshly baked cakes.
