This particular beer style originates from its home in southwest Brussels and requires considerable skill and experience. Because it uses wild yeasts and microorganisms from the air, the fermentation process is more unpredictable than with conventional yeast. Furthermore, the beer can only be called lambic (sometimes spelled lambic) if it is actually produced in the Pajottenland region.
The Oude Lambik 2017 is a fine wine that matured in oak barrels for six years before bottling. For maximum depth and intensity of flavor, not just one brew is stored in the barrel, but three different ones. The trio was produced in three consecutive brewing processes and then matured in the same barrel before being bottled and further aged in the bottle. Thanks to its impressive 6.9% alcohol content, this fine brew can be aged almost indefinitely, gradually gaining in character and aroma.
