Bock Royal Green Hop First Wort Bock. The Bock Royal is the crowning glory of the autumn brewing season. Conceived as a first wort bock, the focus here is on maximum malt quality, refined by the noble freshness of green hops from our own garden. It is a majestic, robust beer that unites traditional craftsmanship with garden-fresh ingredients. As it is a first wort bock, only the first, most concentrated part of the wort (the first wort) is used. The result is a particularly pure, deep, and full-bodied malt character without the unpleasant bitterness that can develop during the later washing of the malt. In the glass, the Bock Royal displays a magnificent, luminous copper-gold color. It is clear, with fine streaks (legs) at the rim, revealing the high extract content. The head is dense and creamy. On the nose, aromas of freshly baked bread, light caramel, and a hint of honey form the foundation. The first sip is powerful, smooth, and warming: the body is extremely full-bodied, almost oily in the mouth. The sweetness of the first wort is present, but thanks to the high original gravity, it comes across as refined and not cloying. The bitterness is subtle and elegantly restrained by Zwanzger standards, just as it should be for a bock. The green hops, however, contribute an ethereal spiciness that elegantly "breaks up" the heavy malt body and lends it an unexpected freshness. The finish is long and malty-sweet with a final nod from the hop garden, ending dry and slightly resinous. Bock Royal is a celebratory beer. It combines the density and strength of a traditional bock with the volatile, green soul of a fresh hop harvest. There are no digital temperature sensors here that adjust with a click. We work by eye, by feel, and with the direct heat of the flame. We don't stir with a motor, but with our traditional wooden spoon. For us, this is more than just a tool – it's the direct connection to the wort. Every turn lets us feel the viscosity and the development of the beer. Even before the first drop of malt sees the kettle, the work begins at the hand-operated gristmill. Here, the grain is still crushed using pure muscle power – a physical effort that you can later taste in the depth of character of our beers. The philosophy: If it fascinates us, it ends up in the kettle. Our creative department is a zone of absolute freedom. We don't let ourselves be restricted by stylistic templates. What interests us, gets brewed.
