After fermentation, this robust stout was allowed to mature for a full twelve months in barrels previously used for fine Fiji rum.
In the glass, Interceptor Fiji Rum BA presents itself in an impenetrable midnight black, crowning its captivating appearance with a hazelnut-brown, creamy head. The bouquet is even more intense than that of the base beer: spicy rum, vanilla, brown sugar, and a hint of oak mingle with the aroma of freshly baked pecan pie. On the palate, it reveals a robust, oily body with a velvety mouthfeel. The combination of demerara sugar, honey, lactose, and maple syrup creates a complex, smooth sweetness, punctuated by the bittersweet roasted notes of coffee, cocoa, and dark chocolate. Oat flakes add further creaminess, while nutty and biscuit notes provide depth of flavor. Barrel aging imparts warm rum spice, subtle wood notes, and a gentle dryness that elegantly tempers the sweetness.
