The Eisbock has a long tradition in Franconia and is an integral part of the region’s cultural treasures. There are numerous legends and stories surrounding the creation of the Eisbock. Essentially, they all say that it must have been a happy coincidence. Due to a mishap, some barrels of bock beer were left outside overnight and some of them froze due to the icy cold. After skimming the ice the next morning, you came across a real treasure: it wasn’t the beer itself that froze, just the water components in it. By skimming, water was removed from the beer and it gained in alcohol and taste. We cannot say with certainty how exactly the Eisbock came into being, but what is certain is that it must have been divine providence.
