The team at To Øl Brewery proves that they have patience with creations such as the Farmhouse Ale Cutting Clouds #2, which has been barrel-aged for 12 months. Brewing pieces of this kind demand maximum restraint and discipline from the brewers. However, the wait is also rewarded with an incomparably complex, intense and aromatic result. However, because the refinement of these specialty beers is not enough, the brewery has also introduced slowness into the brewing processes of its more down-to-earth beers. The project is called 45 Days and includes a number of different variants, all of which were allowed to mature in peace and over a period of 45 days.
Part of this project is their fine 45 Days Organic Pilsner. The noble drop was made with raw materials from controlled organic farming and owes its crisp, full-bodied flavor to the particularly long maturing period. The end result has a pleasant 4.7% ABV and flows into the glass with a glowing golden hue. The crystal-clear beer is crowned with a hand’s breadth of snow-white foam and emits a hoppy bouquet of freshly mown grass, tangerine and floral notes. The taste test reveals a potpourri of sun-dried straw and creamy caramel that mixes with herbs, spicy hops and citrus on the palate. A quite mild bitterness for the style accompanies the play of aromas.
