Acacia honey is a specialty among bee-made spreads and is characterized by its mild and sweet character. It has a slightly more liquid consistency than other types of honey and contains valuable vitamins and minerals. Acacia honey is usually obtained from the nectar of the black locust tree, which is also known in this country as the false acacia. In terms of taste, honey made from actual acacia nectar and that from black locust trees is almost indistinguishable – both are delicate and excellent for flavoring desserts and all sorts of other dishes.
The Greek microbrewery Elixi has taken this precious raw material and conjured up a wonderful beer. Its Delphi Beer Hybrid Style combines exquisite honey with hand-picked malts from various grains and hops from Cascade, Northern Brewer, Tradition, Hersbrucker, and Saphir. The 4.7% strength brew brings a gentle 24 bitterness units and a full-bodied honey sweetness to the glass. Soft malt components, a cleverly balanced bitterness, and fresh, fruity hops perfectly round out the aromatics.
Delphi Beer Hybrid Style is a Mediterranean delight that pairs perfectly with Mediterranean cuisine. Our favorite accompaniment to this honey-sweet specialty is fresh figs, which we quarter and serve with a generous dollop of Greek yogurt, a little acacia honey, and chopped, toasted almonds. A poem!
