Echoes of Time is a series from the French brewery in which the team explores barrel aging. The brewmasters brewed a powerful imperial stout as the base beer and refined it in various wooden barrels.
This version of Echoes of Time matured in select Oloroso sherry casks. In the glass, the 12% strength imperial stout presents itself in a deep mahogany brown with a fine, creamy, dark ivory head. Its aroma is intense: roasted aromas, dark chocolate, and coffee meet hints of dried plums, vanilla, and a spicy wood note. This initial impression continues on the palate, caressing the tongue with an almost liqueur-like texture. The alcohol is well integrated and imparts a fiery warmth that perfectly complements the interplay of flavors: dark chocolate, nutty overtones, delicate sherry acidity, and a hint of coconut.
