The orange is a versatile citrus fruit from China that has spread throughout Europe and the world from there. The trees bear foliage year-round and produce fragrant white blossoms in spring and early summer. The fruit ripens in August at the earliest and can be harvested throughout the winter. All parts of the orange can be used in many ways. You can squeeze the juice, dry the peel, candy it, or use it to extract oil, eat the flesh fresh, and use it in cooking and baking. Oranges go wonderfully with chocolate; honey brings out their floral notes, and cinnamon adds a wonderful warmth. We love fresh summer salads with orange segments, fennel, and olive oil, but we also love orange drinks.
