When you think of aromatic ingredients for beer, hops, yeast and malt come to mind. The craft beer movement has added a few ingredients to this list: In addition to the usual suspects, spices, fruits or even vegetables are added to the kettle. But even in this list of special raw materials, wood would hardly appear.
Wood? That’s right. Spiritual father of all beer sommeliers and exceptional brewer Axel Kiesbye does not shy away from turning the most unthinkable of all materials into beer ingredients. The wild Austrian by choice transforms forest plants into the finest beer specialties year after year. His Waldbier 2020 is all about the oak, a tree that populates the forests of Europe with a magnificent crown, gnarled trunk and deep green leaves. The brewer selected the strains for his beer in 2015 in the Bundersforste-Revier Kierling in the Vienna Woods. Years of preparatory work were necessary because the selected trees were to be processed into barrels. The barrels specially made for the forest beer were toasted and then served as storage and aroma dispensers for the forest beer 2020. Over the course of a few months, the aromatic wood notes of the barrel shaped the character of the beer.
The oak forest beer is a 6.2% strong creative beer with harmonious notes of creamy forest honey, spicy rum, sun-kissed mirabelle plum and a hint of coconut.
It is available in the sizes 0.33l and 0.75l .
