UK/US Ales

Along with lager, ale is one of the two main groups of all beer styles. The term ale is often put on the same level as beer, which is incorrect, as ale is a beer style that falls under the general term beer.

Since the ale beer style is a top-fermented beer, all top-fermented beers are also classified as ales ( pale ale , India pale ale , red ale, dubbel, tripel, quadrupel, saison, lambic, wheat , porter , stout , etc.). Top-fermented beers are fermented at around 15°C – 27°C using top-fermenting yeast.

This form of fermentation gets its name for the following reason: Since top-fermenting yeasts form longer bud clusters during fermentation than bottom-fermenting yeasts, more CO 2 accumulates there, which causes the yeast particles to float to the surface.

However, a typical taste cannot be predetermined for ales, as Pale Ale and India Pale Ale (IPAs) impress with their clear hop note, while Porter and Stouts have a very malty taste.
