Rhubarb is a crisp, tart delicacy that can be harvested in our latitudes from April onwards, weather permitting. The red stalks with their enormous leaves are characterized by their delicate acidity and mild sweetness, making them an excellent base for delicious cakes. Our favorite rhubarb dishes are thick pancakes fried in clarified butter with homemade compote, and a light and airy sponge cake with pieces of rhubarb and a generous dollop of cream. And of course, we think beer with rhubarb is fantastic!
For example, Anderson’s. Their Wild Ale Destiny’s Wild Rhubarb beautifully showcases the unique aroma of rhubarb. The wort was infused with rhubarb and fermented using wild yeasts that cling to the fruit. The brew was then aged for two years. During this extra-long fermentation period, the beer developed a wonderfully complex, profound character and a lively 6.9% alcohol content.
Destiny’s Wild Rhubarb presents itself in the glass with a shimmering copper-red, fawn-colored hue and, as is typical for long-aged beers, forms only a thin layer of foam. The aroma and flavor consist of crisp acidity, fresh rhubarb, fruity apple and cider notes, green grapes, and a hint of fine white wine vinegar. Exquisite!
